1 1/2 cups of jaggery

3 tablespoons of cashew nuts, chopped (optional)
3 tablespoons of raisins (optional)
Instructions:
Strain the mixture through a fine mesh strainer to remove any impurities.
In a separate saucepan, heat the thick coconut milk and add the jaggery syrup.
Mix the rice flour with 1/4 cup of water to form a smooth paste.
Slowly pour the rice flour mixture into the saucepan with the coconut milk and jaggery syrup while constantly stirring.
Continue to cook over medium heat until the mixture thickens.
Beat the eggs and add them to the saucepan, while constantly stirring.
Add the crushed cardamom, nutmeg powder, and vanilla essence to the saucepan.
Cook until the mixture has thickened and has a custard-like consistency.
Remove from heat and allow it to cool.
Stir in the chopped cashew nuts and raisins (if using).
Pour the mixture into a greased baking dish or individual ramekins.
Allow it to set for at least 2 hours in the refrigerator.
Serve chilled and enjoy your homemade Watalappan.
